EASY BREEZY SALMON TERIYAKI

INGREDIENTS

Teriyaki sauce

1 cup water

¼ cup brown sugar

1/4 cup soy sauce

2 TBS honey

1 large clove of garlic, grated or finely minced

2 TBS ground ginger

2 TBS cornstarch

1/4 cup cold water

INSTRUCTIONS

Preheat the oven to Broil.

Take your salmon out of the refrigerator while the oven preheats so that it comes down to room temperature. Sprinkle salmon with salt and place on a parchment or foil lined baking sheet.

Combine 1 cup water, brown sugar, soy sauce, honey, garlic and ginger in a medium saucepan over medium heat. Stir and bring mixture to a boil then reduce to a gentle simmer.

With a whisk or fork, mix together ¼ cup cold water and cornstarch.

Add the cornstarch and water mixture to the simmering sauce. Mix constantly as the sauce thickens to your desired consistency. If it gets too thick, just add a splash of water! If it’s too thin, keep simmering :)

Keep the sauce warm on the back of the stove.

Place salmon in the oven on the middle rack and broil

for 8-9 minutes for gorgeous medium doneness.

Remove salmon, smother with teriyaki sauce. Serve with jasmine rice and/or steamed veggies.

Sprinkle with sesame seeds + sliced scallions.

Savor every bite!
