SWEET POTATOES WITH LIME TAHINI BUTTER

INGREDIENTS


Sweet potatoes (about 4 medium)

6 Tbsp butter, ***softened to room temperature***

¼ Cup tahini (well-stirred)

1 Tsp toasted sesame oil

2-3 TBS freshly squeezed lime juice (equivalent to 1 juicy lime)

¼ Cup soy sauce

1 clove garlic, finely grated 

Salt + freshly ground black pepper to taste 

INSTRUCTIONS


For Sweet Potatoes: Bring a couple inches of water to boil in a large pot fitted with a steamer basket or colander. Add sweet potatoes and cover. Cook for 35-45 mins, until easily pierced with a paring knife.


For Sauce: Whisk together all ingredients until fully incorporated. It will look lumpy at first, keep going until smooth! 


Halve warm sweet potatoes lengthwise and drizzle generously with sauce. Makes 4-6 servings.

GARNISH FOR SERVING: (OPTIONAL)


Sesame seeds (an type)-- About 2 TBS

Lime wedges 

Cilantro or parsley
